Flax
Flax is as a rich source omega-3 fatty acids. Flax is also one of the richest sources of lignans.

Lignans are a type of phytoestrogen, estrogen-like chemicals which can act as antioxidants. They are being researched for their cancer fighting properties, particularly in cases of breast and prostate cancer.

Studies in humans have suggested that flax may have a positive effect on many ailments including cholesterol levels, heart disease and cancer.

Berry Apple Crisp

Berry Apple Crisp

Ingredients:
  • 5 cups apples, peeled and sliced
  • 2 cups berries
  • 1/2 cup firmly packed organic brown sugar
  • 1 tsp cinnamon
  • 1/4 cup milled organic flax
Topping:
  • 1/3 cup cold butter
  • 1 cup organic rolled oats
  • 1cup organic whole wheat flour
  • 1/4 cup organic brown sugar
  • 2 tbsp whole organic roasted flaxseed
  • 1 tsp cinnamon
Instructions:

In a large bowl mix apples, berries, milled roasted flax, cinnamon and brown sugar. Place in baking dish. Mix whole flaxseed with oats, flour, sugar and cinnamon, cut in cold butter until mixture resembles coarse crumbs. Sprinkle over fruit mixture. Garnish with whip cream, yogurt or your favorite creamy topping.

Bake at 350°F for 25 minutes.

Tip: Substitute apples for rhubarb or sliced peaches.
