Picture an autumn morning with frost on the ground—it’s apple baking time. Baked apples are a tasty and healthy treat that will fill your home with cozy smells. There really isn’t enough room to list all of the benefits, but “an apple a day does keep the doctor away,” which is why Yogi Bhajan recommended eating two baked apples at night to relieve and prevent constipation. Apples contain vitamins A, B, C and K as well as folic acid, plus minerals such as potassium, magnesium, calcium. 

To prepare baked apples: Use organic apples if you can—Romes, Granny Smith and Galas are good for baking. Wash, but don’t peel them. Core the apples and stuff with raisins (for extra iron), a little ghee, natural sweetener of your choice (optional), plus cinnamon, ground nutmeg and cardamom (aids digestion).
