4 Fresh Stir Fry Dinners

When it comes to a dinner that's both easy and healthy, you can't beat a stir fry. They're customizable, a great way to use up leftover veggies, and taste just as good (if not better) the next day. Start with a basic sauce and add in flavors that work with your ingredients-ginger, teriyaki, or even a hint of heat. Serve over organic brown rice or brown rice noodles.

Basic Stir Fry Sauce

Ingredients

1/2 cup San-J Organic Tamari soy sauce
1/2 cup vegetable broth
1-2 tbsp honey
1 tsp coconut oil
1 tsp rice vinegar

Directions

Combine in a bowl and use with your favorite stir fry ingredients.

Coconut Chicken Stir Fry

Ingredients

2 boneless chicken breasts, cubed
1 cup snow or snap peas
1 cup carrots, sliced
1 cup broccoli, chopped
1 can coconut milk
2 tbsp coconut oil
1/2 cup stir fry sauce

Directions

Heat oil in non-stick pan or wok and add chicken, cooking until brown. Add sauce and coconut milk into a pan and stir until chicken is coated. Reduce to a simmer and cook for 5 minutes. Add vegetables and coat with sauce. Cook until chicken is cooked thoroughly.

Ginger Tofu Stir Fry

Ingredients

1 package organic tofu, drained
1 bell pepper, sliced
1 cup baby bok choy, chopped
2 Tbsp fresh ginger, grated
2 Tbsp NOW Foods Liquid Coconut Cooking Oil
1 cup stir fry sauce

Directions

Heat oil in non-stick pan or wok and add tofu, cooking 5-7 minutes on each side until crispy. Set tofu aside. Add vegetables and sauce to the pan, cooking until the veggies are almost done. Add tofu to the pan, toss to coat, and cook 1-2 more minutes.

Teriyaki Beef Stir Fry

Ingredients

1 pound sirloin, cut into small strips
1 each red and yellow bell pepper, sliced
1 carrot, sliced
2 Tbsp NOW Foods Liquid Coconut Cooking Oil
1 cup stir fry sauce
1/2 cup San-J Teriyaki sauce

Directions

Marinate beef in teriyaki sauce for at least 30 minutes. Heat oil in non-stick pan or wok and add beef, cooking until brown. Add sauce and stir until beef is coated. Reduce to a simmer and cook for 5 minutes. Add vegetables and coat with sauce. Cook until beef and vegetables are cooked thoroughly.

Spicy Cauliflower Stir Fry

Ingredients

1 head cauliflower, cut into small florets
1 clove garlic, minced
2 green onions, thinly sliced
1 lime
2 Tbsp + 1 tsp coconut oil
1/2 tsp red pepper flakes to taste
1/2 cup stir fry sauce

Directions

Heat 2 Tbsp oil in a non-stick pan or wok and add cauliflower and garlic. Cook until fragrant. Add stir fry sauce and juice from the lime and simmer until sauce thickens. Garnish with green onion and drizzle 1 tsp oil.
