Avocado Egg & Salsa

We have a serious love for avocados at Naturally Savvy and here is a delicious recipe for you to try. Leave a comment if you have variations of your own.

Ingredients

1 avocado
2 eggs
1/2 cup grape or cherry tomatoes
1 lime
1 clove garlic
1/4 cup chopped green onion
Red pepper flakes
salt
pepper
feta cheese (optional)



Instructions

1. Preheat oven to 425°F.
2. Add tomatoes, garlic, cilantro, green onion, and salt and pepper to taste to food processor and pulse. Place in mesh strainer in the sink to let extra liquid drain.
3. Halve avocados, remove the seed, and scoop out a little extra flesh to make room for the egg.
4. Crack an egg into each hole and set on baking tray.
5. Bake for 10 minutes, then top with salsa and bake an addition 5-10 minutes until yoke is done.
6. Top with feta (optional).

1/2 cup sautéd veggies (mushrooms, onion, peppers, zucchini, eggplant—whatever you've got in your fridge)
salt
pepper

Instructions

2. Halve avocados, remove the seed, and scoop out a little extra flesh to make room for the egg.
3. Crack an egg into each hole and set on baking tray.
4. Bake for 10 minutes, then top with veggies and bake an addition 5-10 minutes until yoke is done.
5. Add salt and pepper to taste.
