Awesome and Easy 'Pickled' Onions Recipe

These pickled onions go on anything and can be served alongside anything! Use them in fajitas, souvlaki, on the side of chicken dishes, steak... you can't go wrong!

1 cup organic rice vinegar
2 tbsp of erythritol
1½ tbsp salt
1 tsp garlic powder
1 red onion, sliced then halved
¼ cup water

Place onions into a mason jar. Mix the other ingredients into a mixing bowl. Pour contents into the mason jar over the onions. Seal then refrigerate for at least 30 mins. Lasts one week in the fridge.
