Butternut Squash Recipe with Arugula and Bacon

Cool weather often means an abundance of squash. Butternut squash is a particular favorite and boasts numerous health advantages, including an abundance of beta-carotene and fiber. This butternut squash recipe makes for a great side dish, and try leftovers for a unique and filling breakfast!

Ingredients

1 small butternut squash, small diced

1 pound Applegate Natural & Organic Meat nitrite/chemical preservative-free bacon, diced

6 oz arugula

Directions

Steam squash or bake at 300 F until just soft. You should be able to stick a knife into a piece and have it slide off easily. Set squash aside and cook bacon until half done then add squash to the pan and sauté until bacon is done cooking. Season with salt and pepper to taste and add arugula.
