Ingredients

1 avocado
2 eggs
2 slices cooked turkey (use turkey bacon if you prefer)
1/4 cup shredded cheese
salt
pepper

Instructions

1. Preheat oven to 425 F.
2. Cut turkey into small strips
3. Halve avocados, remove the seed, and scoop out a little extra flesh to make room for the egg.
4. Crack an egg into each hole and set on a baking tray.
5. Top with turkey and cheese, salt and pepper to taste.
6. Bake for 15 minutes or until the yoke is done.

Avocado Egg Caprese

mozzarella or feta cheese
balsamic vinegar
olive oil
basil
salt
pepper
