Ingredients:

  • 1 cup chunky, all-natural peanut butter
  • 1 cup coconut sugar
  • 1 egg (organic, free-range)
  • 1 teaspoon vanilla
  • conditional: ¼ teaspoon sea salt (only if the peanut butter has no added salt!)

Steps/Methods:

Preheat the oven to 350°. Mix the egg and coconut sugar (and salt, if using) in a mixing

bowl on medium speed until creamy. Add the peanut butter and vanilla and until smooth.

For uniform cookies, use a cookie scoop to drop the dough onto a cookie sheet, then

flatten them with a fork in a criss-cross pattern. Bake for 8-12 min.
