Honey Glazed Chicken Quinoa Bowl

Prep these tasty bowls once and eat all week! You can change the quinoa for salad greens or another grain if you like a little variety in your meal prep, but the honey-lime dressing works so well with quinoa that you'll look forward to leftovers. For best results, prepare everything else ahead of time but leave the avocado and Q-cup until you're ready to eat. 


2 skinless chicken breasts
3 Tbsp honey
1 Tbsp soy sauce or San-J Tamari
3 limes
3 Tbsp extra virgin olive oil
2 avocados, sliced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 red or green pepper, diced
4 Q Cups organic quinoa
Sea salt
Black pepper


For the chicken:

Preheat oven to 375 F. Place chicken breasts in a small baking dish. Mix together 1 Tbsp honey, juice from 1 lime, and soy sauce and drizzle over chicken. Roast for 30-35 minutes, basting with the glaze often.

For the bowl:

Prepare the Q-cup according to directions. Top with chicken, tomatoes, cucumber, pepper, and avocado. Mix olive oil, 2 Tbsp honey, juice from 2 limes, salt, and pepper. Toss with dressing and enjoy!
