How to Make A Massaged Kale Salad, 2 Ways

Kale seems to be everywhere, and with good reason. This vibrant leafy green is rich in vitamins A, C, and K, as well as magnesium and fiber. But without the right preparation it can be bitter and tough. Luckily, there's a simple trick to make a delicious, nutritious kale salad—just massage the greens with a bit of olive oil before you serve it. Check out the two massaged kale salad recipes below.

Rainbow Quinoa Massaged Kale Salad

Ingredients

1 cup rainbow quinoa, cooked
1 bunch kale, stems removed
1 carrot, shredded
1/2 cup snap peas
extra virgin olive oil
1 lemon
1 tbsp dijon mustard
1/2 tbsp honey
flax seeds

Directions

Drizzle chopped kale with olive oil and massage until evenly coated. Set aside 5-10 minutes while you prepare the rest of the ingredients. Toss with quinoa, carrots, and peas. Mix together the juice of the lemon, mustard, honey, and more olive oil, adjusting to taste. Drizzle over salad and top with flax seeds.
