Marinated Roasted Red Peppers Recipe

A great topping for sandwiches or a simple savory side dish, this roasted red peppers recipe is a delicious way to incorporate omega-3 rich flax oil onto your plate.

Ingredients

4 large red bell peppers

2 cloves garlic, crushed or sliced into thin slivers

4 tbsp Barlean’s organic flax oil

½ tsp kelp powder or vegetable seasoning

Directions

Place the peppers on a baking sheet in a preheated 400 F oven. Turn frequently until skin blisters on all sides. Remove the peppers from the oven and place in a paper bag. Close tightly. Allow to sit for 20 minutes while the skins sweat off. Peel the loose skins from the peppers, remove the seeds and ribs, and discard. Cut the peppers in strips of desired thickness. Combine the flax oil, garlic, and kelp powder in a medium bowl. Add the pepper strips and marinate at least 1 hour before using, or store in the refrigerator in a tightly sealed container until ready to use.
