Oatmeal Chocolate Chip Cookie

This easy oatmeal chocolate chip cookie will satisfy your sweet tooth while adding a healthy addition of fiber to your diet.

Ingredients:

  • 2-1/3 cups quick-cooking organic rolled oats (not instant)
  • 1 cup white flour
  • 1/2 cup whole wheat pastry flour
  • 3/4 cup unsweetened applesauce
  • 2 teaspoons non-aluminum baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup sugar, Sucanat or Healh-E Sweet
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup carob or chocolate chips
  • 1/2 cup raw nuts (pecans, peanuts, sunflower seeds, chopped almonds, walnuts)
  • 1/2 cup organic raisins

Steps/Methods:

  1. Preheat oven to 350F/180C.
  2. Combine oats, white flour, whole wheat flour, baking soda and sea salt in a large bowl.
  3. Using a blender or electric mixer, cream applesauce and sugar together until light and fluffy. Beat in egg and vanilla.
  4. Stir wet mixture into flour mixture.
  5. Add chocolate chips, nuts and raisins. Mix well.
  6. Spoon 2 inches apart onto a lightly greased cookie sheet.Bake at 350F/180C for 12 minutes or until golden brown.
