Ingredients:
- 3/4 cup R.W. Knudsen® Family Organic Cranberry Pomegranate Juice
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 2 tablespoon Santa Cruz Organic® 100% Lemon Juice
- 1 tablespoon Dijon-style mustard
- Kosher salt or coarse sea salt and freshly ground black pepper
Steps/Methods:
- To make the dressing, reduce cranberry pomegranate juice and balsamic vinegar by boiling 5-7 minutes until thickened in a 1-quart saucepan.
- In a small bowl, whisk cranberry pomegranate reduction with lemon juice, olive oil, and mustard.
- Season to taste with salt and pepper.
