Pomegranate Dressing

Pomegranates are rich in antioxidants and when added to a salad satisfies the sweet tooth and may limit cravings after your meal.

Ingredients:

  • 3/4 cup R.W. Knudsen® Family Organic Cranberry Pomegranate Juice
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tablespoon Santa Cruz Organic® 100% Lemon Juice
  • 1 tablespoon Dijon-style mustard
  • Kosher salt or coarse sea salt and freshly ground black pepper

Steps/Methods:

  1. To make the dressing, reduce cranberry pomegranate juice and balsamic vinegar by boiling 5-7 minutes until thickened in a 1-quart saucepan.
  2. In a small bowl, whisk cranberry pomegranate reduction with lemon juice, olive oil, and mustard.
  3. Season to taste with salt and pepper.
