My friend Rachel told me this recipe was a huge hit at her house so I had to try it. It was super easy to make and since she didn't give me any measurements for the mayo or mustard, I added them slowly and adjusted the amounts to my taste. My husband gave it the final touch by adding a bit more mayo, salt and pepper and it was delicious. You can vary the recipe by adding peas as well.

Ingredients

8 red potatoes

6-8 eggs

2 tbsp white vinegar

3 green onions

1/4 cup Mayonnaise

1 tbsp Dijon mustard

1 tbsp Yellow mustard

Salt and pepper to taste

Parsley for garnish

Directions

Add vinegar to pot and boil potatoes until you can pierce easily with fork (the vinegar prevents the potatoes from browning)

Boil eggs 6-8 minutes

Allow both to cool down

Chop eggs and potatoes into squares and place in large bowl

Add green onions

Add mayo, mustard, and salt. Adjust amounts to personal taste

Mix well

Garnish with parsley
