Rise & Shine Gluten-Free Muffins Recipe

Packed with protein, healthy fats and the good kind of carbs, this delicious muffins recipe is the perfect way to start your day. Bake some up on the weekend so you'll be sure to have a healthy boost each day of the busy weekday. They make for an excellent healthy mid-day snack, too!

Ingredients

2 cups whole grain or gluten-free flour

1¼ cups organic cane sugar or Organic SweetenFX

2 tsp baking soda

2 tsp cinnamon

½ tsp salt

1 apple, peeled and chopped

½ cup crushed pineapple, drained

2 cups grated carrots

½ cup chopped dates or ½ cup chopped raisins

½ cup chopped nuts

½ cup coconut flakes

2 eggs

¾ cup oil

1½ teaspoons Nature's Flavors Vanilla Extract

Directions

Preheat oven to 350 F. Mix the first 12 ingredients together. Next add remaining 3 ingredients. Mix well. Using greased muffin cups or paper lined cups, fill ¾ full of batter. Bake for 20-25 minutes.
