Spicy Lentil and Potato Curry Recipe

I’ve been on a mission to come up with a tasty Thai curry recipe for years. But it’s not easy because Thai restaurants often have a ton of ingredients at their disposal that I don’t have on hand. Overtime, I’ve begun to accumulate some of these ingredients but I still prefer recipes that are somewhat simple, yet complex to the palette.

I love putting lentils to work in the kitchen because they’re so healthy. They lower your cholesterol and manage blood-sugar levels because they’re high in fiber. Lentils are also loaded with B-vitamins and they have virtually no fat. They’re a great addition to a healthy diet and a great vegetarian source of protein. Here's a delicious recipe that combines curry and lentils for a satisfying meal.

Spicy Lentil and Potato Curry Recipe

1 cup dry lentils

1 large potato, cubed

1 (13.5) oz. can coconut milk

2 Tbsp fresh Thai basil, chopped

1 Tbsp Sriracha hot chili sauce

1 tsp chili powder

1 tsp fresh ginger

1 yellow pepper, chopped

Salt & pepper to taste

Method

1. Cook lentils in water according to package instructions.

2.  Around 15 minutes into cooking the lentils, add in the potato and cook for 8 minutes.

3.  Add in the coconut milk, basil, Sriracha, and spices.

4. Bring to a boil and then turn down the heat and let simmer until the lentils and potato are soft and fully cooked (about 15 to 20 minutes, depending how large the potato is cut).

5. Stir in the chopped yellow pepper and let simmer another few minutes.

6. Serve hot over rice.
