Stuffed Peppers And Tomatoes

Serve rice the fun way – stuffed inside peppers and tomatoes. This recipe is versatile, so feel free to add whatever herbs and spices you'd like!

Ingredients:

  • 2 medium green peppers
  • 2 medium tomatoes
  • rice (brown or wild), cooked
  • herbs of your choice (oregano, basil, thyme)
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 cup water

Steps/Methods:

  1. Cook the rice until it's just about ready.
  2. Preheat oven to 400F/200C.
  3. Slice the tops off the peppers and tomatoes, saving the tops.
  4. Remove and discard the seeds of the peppers. Remove and save the insides of the tomatoes. Set aside pepper and tomato shells.
  5. In a medium size bowl, mix the rice, onion, garlic, herbs, and the insides of the tomatoes together.
  6. Stuff the rice mixture into the shells of the tomatoes and peppers. Replace the tops.
  7. Place in a deep baking dish with 1/2 cup of water and bake for 45 minutes.
