Feature Recipe of the Month
For those mornings when you don't have time to sit and enjoy your breakfast cereal in a bowl, take a Puffins Muffin with you on the way out the door! Puffins Muffins are a delicious way to start your day or keep yourself going with an afternoon snack. For variety, try adding raisins, blueberries, sunflower seeds, chocolate chips or cranberries.
Puffins Muffins
Ingredients
Serves 12 to 14
- 1 cup Barbara’s Puffins Cereal (Original or Cinnamon), finely crushed (start with about 2 3/4 cups whole cereal)
- 1/4 cup canola oil or safflower oil
- 1/4 cup honey
- 1 egg
- 1 cup milk or milk substitute
- 1 1/4 cups unbleached or whole wheat pastry flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. sea salt
- 1/2 tsp. baking soda
- 1/2 cup granulated sweetener
Optional: Raisins, blueberries, sunflower seeds, chocolate chips or cranberries.
Directions
Line a 12 cup muffin tin with paper muffin cups. Preheat oven to 400° F.
Mix together flour, baking powder, baking soda, salt. Add sweetener and crushed Puffins (if desired, add 3/4 cup nuts or raisins).
In separate bowl, mix oil, honey, egg and milk until well blended. Add to dry ingredients, blending with wooden spoon until combined. Do not over mix.
Fill muffin cups to 3/4 full and bake for 18 - 20 minutes.
Makes 12 muffins.
