When I was a kid, the best part about making cookies was getting to eat the leftover dough. Even though I'm an adult now, I still have a pretty big fondness for cookie dough. These bites are perfect for satisfying your sweet tooth without any refined sugar, they're great for lunchbox snacks, and you can't go wrong if you bring a tray or two to your next party. Plus dressing them up as little snowmen makes them super cute.
1 cup raw nuts (almonds or cashews work best)
1/2 cup rolled oats
1/4 tsp salt
1/2 tsp cinnamon (optional)
1/2 cup pitted dates + 1 tbsp agave or maple syrup
1 tbsp peanut butter (optional)
1 tbsp organic vanilla extract (optional)
2 tbsp chocolate chips (use non-dairy if you prefer)
For Snowmen+ chocolate chips for buttons, eyes
+ carrot for nose
+ coconut for the snowman part
Process the nuts and oats in a food processor until a fine flour forms. Make sure not to process too long so the nuts don't turn into nut butter. Add the remaining ingredients and combine. Scoop out with a spoon and form small balls. (Add optional decorations. )Place on a plate or tin lined with parchment paper and freeze 20-30 minutes. Store in the fridge for a quick snack anytime the cookie craving hits!
