Coconut Blackberry and Blueberry Chia Pudding

This healthy snack or breakfast is satisfying and gives you a hearty serving of omega-3 fatty acids from the chia and naturally sweet fruit. You can add maple syrup for an even sweeter treat.

Ingredients

½ cup blackberries and blueberries
¼ cup chia seeds
1 cup coconut milk
1 tbsp unsweetened shredded coconut
1 tbsp maple syrup (optional)

Directions

  1. Place chia seeds, coconut milk, and shredded coconut in a small or medium mason jar.
  2. Cover with a tight lid and shake to combine well.
  3. Store in the fridge overnight and add berries to enjoy.
