Crustless Quiche with Sauerkraut

This versatile quiche is a great way to use cooked meat or seafood, but you can also leave both out and enjoy a vegan treat full of the healthy properties found in fermented foods like sauerkraut. Serve with a light mixed green salad.

Ingredients:

  • 1 cup cut up cooked chicken, turkey, or salmon
  • cup chopped green onion
  • 1 clove minced garlic
  • 1 cup well drained sauerkraut
  • 1 cup almond breeze or milk or choice
  • 2 eggs, organic
  • teaspoon basil
  • teaspoon cinnamon
  • teaspoon tarragon
  • 2 teaspoons parsley
  • 1 cup grated cheese of choice, such as Feta or a Vegan Cheese

Steps/Methods:

Oil a pie shell or quiche pan. Spread chicken or fish in pie shell or quiche pan. Add onions, garlic and sauerkraut.

Combine milk, eggs and spices, and mixing well. Pour this mixture over the sauerkraut in the quiche pan. Top with cheese.

Bake in 350 F. oven for 45 minutes or until golden brown and a knife inserted in the center comes out clean.
