A member of the cruciferous family of vegetables, cabbage contains compounds that have been connected with a decreased risk of cancer. Furthermore, compounds in this healthy vegetable assist the liver in its detoxification efforts. It is a low-calorie vegetable and a good source of vitamin C, fiber, and potassium. Ingredients:
2 cups red cabbage, finely shredded
2 cups green cabbage, finely shredded
½ cup carrots, shredded
¼ cup red bell peppers, chopped
¼ cup green bell peppers, chopped
¼ cup green onions, finely chopped
1 cup xylitol
½ tsp salt
½ tsp dry mustard
½ tsp mustard seeds
1 cup Maison Orphée organic apple cider vinegar
1 cup non-GMO mayonnaise (we like Sir Kensington's)

Directions:
Combine all dressing ingredients, except mayonnaise, in a small pan. Cook over medium heat just until sugar is dissolved, stirring frequently so it doesn't stick. In a large bowl, combine all salad ingredients, and mix well. Add dressing and mix well. Let cool. Add mayonnaise and mix well. Refrigerate at least 2 hours. Stir about every ½ hour so flavors meld.
