Sweet potatoes, even when cooked only lightly, become super soft so it’s no surprise that there’s no mashing involved in this recipe despite its name. Sweet potatoes are high in beta-carotene and are known to raise blood levels of vitamin A. Vitamin A is particularly important for the health of your eyes. Sweet potatoes are also an excellent source of vitamin C and most of the B vitamins like biotin. Along with vitamin A all of these nutrients contribute to a healthy glow and a full head of hair.
Be sure to include some healthy fat into this recipe (like our partner Melt Organic's buttery spread), because research shows that consuming a bit of fat with your sweet potatoes increases beta-carotene uptake!

Ingredients:
2 large sweet potatoes
1/3 of an onion
2 gloves garlic
2 tbsp olive oil
1 tbsp Melt Organic
1 tsp rosemary
1/8 tsp sea salt
¼ tsp cumin
¼ tsp cinnamon

Directions:
Heat a pan with a lid or cover on medium; add chopped onion and garlic; simmer until onions have turned slightly transparent (about 5 minutes). Meanwhile chop sweet potatoes into approximately 1x1x1cm chunks; add to pan when onions are ready, as well as 1/8 tsp of salt and cover. Allow potatoes to cook covered, for 20-30 minutes on medium heat until potatoes are soft. Uncover and mix every 5-10 minutes in between. Add rosemary, cumin, and cinnamon to the pan 10 minutes after adding potatoes. Allow to cool for 3-4 minutes before serving. Serves 4.
