Ingredients

1 tablespoon olive oil
1 cup onion, chopped
1 stalk celery, chopped
1 cup carrots, sliced thinly
1 teaspoon ginger, grated
1 clove garlic, minced
1 teaspoon curry powder
1 teaspoon turmeric
1/2 teaspoon ground cinnamon
2 tablespoons tomato paste
A handful of chopped kale (or replace with spinach)
2 bay leaves
1 teaspoon sea salt
4 cups water or use chicken or vegetable broth
1/2 cup red lentils

Directions

Heat oil in a large pot and sauté onions, celery, carrots, ginger, and garlic for a few minutes, until softened. Add spices and sauté a few more minutes. Add remaining ingredients, except greens, and cook 20 to 30 minutes or until lentils are soft. Finally, add greens and cook until they begin to wilt. Remove bay leaves and serve.
