Spicy Cucumber Omelet Recipe

Cucumbers always get lost in the way of all those “Super Foods” when it comes to nutritional density, but let me remind you… Cucumbers are packed with silicon, sulfur, vitamin, A, vitamin C and water! All of these nutrients are important for the health of your hair, skin and nails. Cucumbers are also rich in the B vitamins, calcium, magnesium, and potassium.

Ingredients:

1 tsp Melt Organic

2 eggs

¼ cup of egg whites

2 tbsp of almond milk

2 stalks kale

1 clove of garlic

¼ cup of chopped onion

3" of a cucumber

1/8 tsp of cumin

cayenne pepper

sea salt

Directions:

Chop kale into thin slices, onion into squares and mince the garlic. In a pan heated to med-high melt Melt Organic, (less than one minute) turn heat down to low once butter has melted. Add kale, garlic, onions and 1 tbsp of water to pan and turn heat and mix cover; allow to simmer (don’t forget the water, this is important). Chop cucumber into square chunks. In a glass or bowl mix together eggs, milk, cumin and a dash of cayenne and salt. Add egg mixture to pan and cover, mixing every minute for two minutes. Add cucumber and continue mixing until eggs are cooked through, but still moist. (Total time for eggs cooking on low heat: approximately 8 minutes.) Serve and enjoy!
