Cranberry Salba Muffins

Salba is an organic omega 3 and fiber rich supplement that is vegan, gluten free and a great way to take muffins to the next notch. These low fat muffins support healthy digestion and colon health.

Ingredients:

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2teaspoon unrefined sea salt
  • 6 tablespoons Organic Whole Salba
  • 2 tablespoons organic canola oil
  • 1 teaspoon vanilla
  • 1 3/4 cups unsweetened applesauce
  • 1/3 cup agave or maple syrup
  • 1 cup dried cranberries

Steps/Methods:

  1. Preheat oven to 300 F. Lightly grease muffin tins with some oil.
  2. Mix the following ingredients in a bowl: whole wheat flour, baking powder, baking soda, salt and Salba.
  3. Mix in second bowl cranberries, canola oil, applesauce, vanilla, and honey.
  4. Put everything together and mix it fast. Put the mix in the muffin tins.
  5. Place muffins in 300 F oven for 25 minutes.
