When I was a kid, I would open my lunch box and find the sandwich mom had packed for me which often was on white bread and had some meat slapped in between. Every afternoon, when there was sandwich meat, involved I would end up with a headache. Now I am much wiser and more in tune with my body, however, at the time it did not even occur to me that it was that lunch that was giving me those headaches. A lot of brands have eliminated some of the ingredients that were likely triggering me like MSG, nitrates, or aspartame.
Now I choose preservative-free sandwich meat and often skip the bread. I love topping a salad with shredded meat or even wrapping meat with some mustard inside a piece of lettuce for lunch.
