Gingered Sweet Potatoes with Thyme

Here's one of the many different ways to prepare sweet potatoes! This quick and easy recipe is still high on nutrition, and keeps you from spending too much time in the kitchen. Great for holidays, it is lacto-ovo vegetarian, gluten free & egg free.

Ingredients:

  • 3 medium to large sweet potatoes
  • 2 tablespoon butter
  • cup ginger juice
  • 3 tablespoon ginger, minced
  • 2 teaspoon thyme
  • teaspoon salt
  • 1/8 teaspoon white pepper

Steps/Methods:

Wash sweet potatoes and put into 400 F oven for 45-60 minutes until soft when pierced with a fork.

While potatoes are cooking portion out the butter, mince the ginger and chop the thyme. Let potatoes cool for about 5 minutes after removing from the oven.

Place sweet potatoes into mixer fitted with a flat beater or paddle attachment. Pour the ginger juice, butter, thyme, salt, pepper and butter.

Mix until combined. Taste and add more butter or seasonings if you would like.
