A simple and delicious way to get some greens! Green beans are quick and easy to make, and supply some much-needed dietary fiber. Sesame seeds are high in antioxidants and they contain sesamin and sesamolin, two substances that studies show have cholesterol-lowering effects and blood pressure reduction in humans.
1½ lbs young fresh green beans, stem ends removed
1 tbsp Maison Orphée Walnut of Périgord oil olive oil
1 tsp sesame seeds, toasted
Bring a large saute pan of water to a rapid boil and add the green beans. Simmer until crisp-tender, about 3 minutes. Drain well and return to the saucepan. Lightly coat with walnut oil and sesame seeds. Sauté, tossing frequently, for about 1 minute more. Serve at once.
