Crunchy, sweet with a smooth warming blend of ginger and cardamon, this apple dish is a great way to start the day or snack on. Full of fiber and omega-3s from walnuts.
Ingredients:
- 2 1/2 lbs. apples, cored and sliced
(about 5 cups)
- 1/3 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/4 cup chopped crystallized ginger
- Scant 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cardamom
- 5 tbs. maple or agave syrup
- 1 1/4 cups SmartBran
Steps/Methods:
- Preheat oven to 375F.
- In a large bowl, toss togetherapples, cranberries, walnuts, ginger, cinnamon, cardamom, and 2 tablespoons of syrup.
- Transfer mixtureto a rectangular baking dish about 8" x 11" x 2" size.
- Distribute SmartBran on top and drizzle on remaining syrup.
- Bake until apples are easily pierced with a knife and top is lightly browned. Serve warm or at room temperature.
