Authentic Shish Taouk: Middle Eastern Chicken Recipe with Greek Yogurt Marinade

Shish taouk is a traditional Middle Eastern favorite made with yogurt and lemon juice. This 24 hour marinade can be prepared during dinner the night before, so the next day requires just a quick cooking.

Ingredients

5-8 organic chicken breasts

2 bulbs fresh garlic, crushed

1 ½ cups fat free organic plain Greek yogurt

1 ½ cups Maison Orphée olive oil

1 cup lemon juice

½ cup red wine vinegar

1 tablespoon ground ginger

1 tablespoon ground white pepper

1 tablespoon salt

2 tablespoons dried oregano

2 tablespoons ground paprika

Directions

Mix ingredients and marinade 5-8 chicken breasts for 24 hours. Grill the chicken breasts or broil at 550 F for 7-8 minutes per side.

Chef's Note: The marinade makes longer cooking times quite forgiving (you want to make sure chicken is really well cooked). It will stay juicy even with 20 minute cooking times.
