Cherry Sauce with Kirsch

I love making this sauce during the winter because it compliments a lot of dessert dishes as well as savory ones. This recipe is egg free and vegetarian.

Ingredients:

  • 1 pint cherries, pitted or 1 10oz bag of frozen cherries, not maraschino cherries
  • cup cherry jam/preserve
  • 1 drop almond extract
  • tsp orange zest
  • cup kirschwasser – Do not buy cheap kirsch, it will taste medicinal.

Steps/Methods:

Mix all ingredients together in a pot and bring to a simmer. Simmer mixture for 10 minutes. You can use this as a topping for chicken or pork. In addition, you can add 3 tbsp vanilla sugar and use it as a sauce for Coeur a la Crme.
