Stuffed Tomatoes

This is a nutrient packed dish! Both spinach and tomatoes may help in the prevention of certain types of cancer. Plus the olive oil will enhance the overall flavor and adds good fats to the meal. Go on and dig in.

Ingredients:

  • 4 medium tomatoes
  • 1 teaspoon olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 2 cups raw spinach, chopped

Topping:

  • 1/4 cup sunflower seeds
  • 2 tablespoon nutritional yeast
  • 2 tablespoon fresh parsley, chopped
  • pinch sea salt
  • freshly ground pepper

Steps/Methods:

  1. Preheat oven to 400F/200C.
  2. Cut a slice from the top of each tomato. Scoop out pulp and put aside.
  3. In a skillet, heat oil. Add onion and garlic. Cook over medium heat until tender.
  4. Stir in spinach, salt and pepper.
  5. Spoon spinach mix into tomatoes.
  6. Grind sunflower seeds in a coffee grinder or blender.
  7. Combine sunflower seeds and nutritional yeast. Spoon on top of each tomato. Sprinkle parsley on top.
  8. Arrange on baking sheet.
  9. Bake for 20 minutes.
