Chia Seed Snowballs

This easy recipe is packed with healthy raw and vegan protein.  Feed these to your kids for a good after school snack, or eat them all yourself…your secret is safe with us! Chia seeds are being considered a super food now. Move over little planters, chia seeds are great to eat!

Ingredients:

  • 1 cup peanut butter (preferably natural, without added sugar)
  • ½ cup honey
  • ¼ cup brown rice syrup (found at health food store)
  • 2½ cups brown rice cereal (found at health food stores, or any of your favorite crunchy cereal)
  • ½ cup oats
  • 1-2 tablespoons chia seeds
  • optional: 1 cup finely shredded coconut

Steps/Methods:

Mix all of the ingredients together except for the coconut. Roll the mixture

into balls and then roll in the coconut.

Or, if omitting the coconut, press mixture into an 8×8” pan.

Let them sit until soft, about 1 hour.
