Mediterranean Pizza

Kalamatas are one of my favorite olives and they are rich in iron, vitamin E, fiber and contain monounsaturated fat which helps increase your good cholesterol. The recipe is gluten free, and egg free. So sit down without guilt and enjoy a slice of this pizza.

Ingredients:

Topping Ingredients:

  • 1 large red peppers, roasted
  • 1 8oz jar artichokes hearts
  • 8oz kalamatas, pitted and sliced
  • 8 oz goat cheese

Gluten-Free Dough:

  • 1 tbsp of dry yeast
  • 2/3 cup brown rice flour
  • 1/2 cup + 1 tbsp of tapioca flour
  • 2 tbsp of powdered milk
  • 2 tsp of xanthan gum
  • 1/2 tsp of salt
  • 1-1/8 tsp of unflavored gelatin
  • 1/2 tsp fresh oregano, minced
  • 1 tsp of fresh basil, minced
  • 1/2 tsp fresh thyme, minced
  • 1/4 tsp rosemary, minced
  • 1/3 cup of homemade chicken stock or water
  • 1/2 tsp of honey

Toppings:

  1. Preheat oven to 400 degrees F and roast red peppers until skins are black.
  2. Remove peppers from their skin. You can also use jarred roasted red peppers if desired.
  3. Raise heat to 550 degrees F.
  4. Julienne roasted peppers, set aside.
  5. Quarter artichokes and set aside.
  6. Slice kalamatas in half, set aside.

Gluten-Free Dough:

  1. Preheat oven to 550 degrees F.
  2. In medium bowl, blend all dough ingredients by hand and if the dough is too stiff, slowly work in more liquid.
  3. Take dough and roll out thin, put on baking sheet. Put in oven and par-bake at 500 degrees F until dough has blistered.
  4. Take out of oven and cover with goat cheese, artichoke, red peppers and kalamatas.
  5. Bake at 450 degrees F until cheese is soft.
