- 4 cups apple juice
- 2 large potatoes, diced (unpeeled)
- 1 can chick-peas, drained
- 1 bay leaf
- 1 tbsp. lemon juice

Steps/Methods:
- In large skillet, heat oil over medium-high heat.
- Cook garlic and onion until softened.
- Add seasonings and cook, stirring, for 2 minutes.
- Stir in tomato paste; pour in apple juice.
- Add potatoes, chick-peas, bay leaf, and lemon juice.
- Bring to a boil. Reduce heat and simmer, uncovered, for 25-30 minutes, stirring occasionally, until potatoes are tender and mixture has thickened.
- Discard bay leaf.
