Ingredients:
- 2 Delicata squash
- 1/4cup olive oil
- salt and pepper to taste
Steps/Methods:
- Preheat oven to 400F. Cut squash in half lengthwise and scoop out seeds and membranes.
- Lay the squash flesh side down and cut into1/4"half rings and lay on a chemical free cookie sheet (there is no need to peel the skin off). Do not crowd pieces together as that will cause them to steam instead of roast.
- Drizzle half of the olive oil over the rings, salt and pepper them andplace in the oven for 10 mins. until they are golden brown (if they are not ready, check the rings in 3 min. increments until they are done).
- Flip each ring over and return them to the oven for about 5 mins.Serve immediately.
