Ingredients:
- 1/2cup cold-pressed oil (canola, walnut or other)
- 1/2cupunrefined dried sugarcane crystals
- 1 egg
- 1 tsp. finely grated fresh ginger
- 1 cup blackstrap molasses
- 1 cup hot water
- 21/2 cups whole spelt flour
- 11/2 tsp. baking soda
- 1/2tsp. sea salt
- 11/2 tsp. cinnamon
- 1 tsp. dried ginger
- 1 tsp. cloves
Steps/Methods:
- Preheat oven to 350F.
- With a mixer, beat oil, egg and sugarcane crystalsuntil smooth. Add fresh ginger and blackstrap molasses and mix well. With the mixer running on low mix in hot water.
- In a separate bowl, combine flour, baking soda, sea salt, cinnamon, dried ginger and cloves. Fold into wet ingredients until mixed in evenly.
- Pour batter into a parchment-lined loaf pan. Bake in preheated oven for 50 minutes or until the top bounces back when lightly touched.
