Basil Tofu Vegetable Sandwich

Tofu can be so much more than just a stir fry favorite. High in soy protein and low in fat, tofu is a great option for vegans as well as those limiting meat. Thank you to Nasoya for a tasty sandwich filling any herb would work in!

Ingredients:

  • 1/2 pkg Nasoya extra firm or firm tofu
  • 1 tablespoon basil, minced
  • 3 tablespoons green onions, minced
  • 2 cloves garlic; minced
  • 2 teaspoons lemon juice
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon crushed black pepper
  • Additional vegetables such as tomato slices, onion slices, carrots, sprouts, lettuce, grated red cabbage, etc.

Steps/Methods:

Drain tofu and pat dry with paper towel. Mash tofu with fork in bowl. Stir in basil, green onions, garlic, lemon juice, salt and pepper.

Spread 2 tablespoons tofu mixture onto your favorite bread. Top tomato slices, red onion slices, shredded carrots, romaine leaves, & alfalfa sprouts and you have a healthy, delicious sandwich!
