Almond Butter Balls Recipe
Nutritious nut butter have a great ratio of proteins to fats to fiber, so small amounts can really fill you up. The medium chain fatty acids in coconut oil are a quick source of energy for your brain and body making these indulgent little almond butter balls truly good for you. And they are plant-based for our vegetarian and vegan friends!
Ingredients
1 cup smooth, organic almond, peanut, or other nut butter
2 tablespoons Organic Coconut Oil
1 tablespoon raw cacao powder
1/8 teaspoons ground cinnamon
3 tablespoons raw honey (or maple syrup)
1 3/4 cups puffed millet (or puffed brown rice cereal)
Optional Coating:
2 tbsp honey – heated until liquid
1/4 cup almond meal or finely chopped almonds
1 tablespoon matcha powder
1/4 cup coconut flakes

Directions
1. Combine coconut oil, honey and nut butter, cacao powder, and cinnamon in a small pot.
2. On medium heat, melt ingredients together. Remove from heat as soon as the mixture has melted together. Do not overheat or these will not work. Add millet to the mixture and stir to combine.
3. Let the mixture cool on the counter for 15 minutes before rolling into golf-sized balls.
4. Roll balls in honey and coat balls with a mixture of coconut flakes and matcha powder or almond meal if desired.
5. Store in the refrigerator for up to 5 days, or make a big batch for the freezer.
