With kalamata olives and organic goat cheese, this pizza recipe includes a homemade gluten-free pizza crust! A great intro into gluten-free bread making, this pizza is perfect for dinner, or cut into bite size pieces for a yummy party appetizer!
Pizza Ingredients:
1 large red pepper, roasted
1 cup artichoke hearts
1 cup kalamata olives, pitted and sliced
1 cup organic goat cheese

Gluten-Free Dough Ingredients:
1 tbsp of dry yeast
2/3 cup brown rice flour
½ cup + 1 tbsp tapioca flour
2 tbsp organic powdered milk
2 tsp organic xanthan gum
½ teaspoon of salt
1 tsp unflavored gelatin
½ tsp fresh oregano, minced
1 tsp of fresh basil, minced
½ tsp fresh thyme, minced
¼ tsp rosemary, minced
1/3 cup organic chicken stock or water
½ tsp of honey
Directions:
Preheat oven to 400 F and roast red peppers until skins are black. Remove peppers from their skin. You can also use jarred roasted red peppers if desired. Julienne roasted peppers, set aside. Quarter artichokes and set aside. Slice kalamata olives in half, set aside.
Heat oven to 550 F. In medium bowl, blend all dough ingredients by hand and if the dough is too stiff, slowly work in more liquid. Take dough and roll out thin, put on baking sheet. Put in oven and par-bake at 500 F until dough has blistered; reduce heat to 450 F. Take out of oven and cover with goat cheese, artichoke, red peppers and kalamata olives. Bake at 450 F until cheese is soft.
