These two-ingredient cookies are perfect for busy weekdays when we don't always have time to stop and eat breakfast. They're healthy, customizable, and easy to make, which makes them a triple threat in our house! You can use regular old-fashioned rolled oats or gluten free, depending on your dietary needs. Toss in an add-in or two and you've got an especially tasty treat. We use whatever we have in our cupboards, but a few ideas to try are raisins, cranberries, walnuts, almonds, pecans, chopped dates, pumpkin or sunflower seeds, chocolate chips, unsweetened coconut flakes, dehydrated apple pieces, and nut butter.
Ingredients
2 ripe bananas, mashed
2 cups old-fashioned rolled oats
Directions
Preheat oven to 350 F. Roughly process oats in a food processor to make flour. Combine with mashed banana until smooth and add your favorite extras. Scoop tablespoon-sized balls onto a baking tray and bake for 9-12 minutes until done. Enjoy!
