This simple, vibrant keto-friendly salad is super easy to make and is served with a wonderful zingy dressing that is full of flavor.
If you’re after a no-fuss salad recipe that will still impress a crowd, then this purple power salad is it! The fresh flavors of the cilantro, lime, and ginger are always a perfect combination, while the crispiness of the radishes brings the perfect crunch. An ideal salad to serve alongside chicken, fish or beef.
Serves: 6 -8
Ingredients you will need
½ Med Head purple cabbage, finely sliced/shredded
6 small/medium Radishes, thinly sliced
3 Scallions, finely sliced
3 Tbsp Cilantro, leaves
Ginger dressing ingredients
1 Cup Coconut yogurt, plain and full fat
2 Tbsp Lime juice, freshly squeezed
1 Tbsp Ginger, freshly grated
1 Tbsp Wholegrain mustard, (keto friendly)
2 tsp Olive oil
½ tsp Cumin
Instructions
- Prepare all salad ingredients and add to a bowl, toss together.
- Add all the dressing ingredients to a small mixing bowl and whisk together until well combined.
- Just prior to serving drizzle dressing over the salad and lightly toss through.
