1 cup fresh pineapple chunks

3/4 cup coconut water/juice*

1/4 cup plain lowfat kefir

Directions

Place all ingredients in a blender and blend until smooth.

*Note: I like to use Lakewood organic fresh blend of coconut and grape juice but you can use any bottled blend of coconut with any juice you like as long as there is no added sugar.
