Applesauce Gingersnap Drop Cookies

These seasonally spicy cookies will warm your senses and melt away the winter blues. Choose organic applesauce as the base to these chewy cookies to avoid high-fructose corn syrup and artificial colors lurking in so many conventional brands, or better yet – make your own!

Ingredients:

2½ cups Living Now all-purpose gluten-free flour

1½ tsp ground ginger

1 tsp baking soda

1 tsp ground allspice

½ tsp salt

1½ cups organic cane sugar

2 tbsp Melt Organic spread or organic butter, softened

½ cup applesauce

¼ cup organic molasses

organic coconut oil (enough to grease pan)

Directions:

Preheat oven to 375 F. Lightly rub cookie sheets with coconut oil. In medium bowl, sift together flour, ginger, baking soda, allspice, and salt. In large bowl, cream together sugar and Melt Organic until well-blended. Stir in applesauce and molasses. Add flour mixture to applesauce mixture; mix until well blended. Drop dough by rounded tablespoons 1 inch apart onto prepared cookie sheets. Flatten each slightly with moistened fingertips. Bake 11-14 minutes, or until desired doneness. Watch carefully at end of baking to prevent over-browning.
