We have a serious love for avocados at Naturally Savvy. These tasty fruits (yes, it is a fruit!) are a key player in the keto diet and low-carb diets and are the main source of healthy fats. Avocado Egg and Salsa
Ingredients
1 avocado
2 eggs
1/2 cup grape or cherry tomatoes
1 lime
1 clove garlic
1/4 cup chopped green onion
Red pepper flakes
salt
pepper
feta cheese (optional)
Instructions
1. Preheat oven to 425 F.
2. Add tomatoes, garlic, cilantro, green onion, and salt and pepper to taste to food processor and pulse. Place in a mesh strainer in the sink to let extra liquid drain.
3. Halve avocados, remove the seed, and scoop out a little extra flesh to make room for the egg.
4. Crack an egg into each hole and set on a baking tray.
5. Bake for 10 minutes, then top with salsa and bake an addition 5-10 minutes until the yoke is done.
6. Top with feta (optional).

Variation-Avocado Egg & Veggies

1/2 cup sautéd veggies (mushrooms, onion, peppers, zucchini, eggplant-whatever you've got in your fridge)

pepper
Instructions
1. Preheat oven to 425 F.
