
Crunchy, creamy, zesty and fresh tasting, this salad is bright in color and flavor. Full of good for you fats, protein from peanuts and helpful digestive enzymes found in pineapple.
Ingredients:
- 1 cup peanuts
- 1 small pineapple, cut into small chunks
- 2 avocados
- 1 small lime, juiced
- 1 orange, juiced
- cup red onion diced
- cup cilantro, chopped coarsely
- cup mint, chiffonade
- 1/3 cup green onions finely sliced
- teaspoon sriacha sauce
- salt and pepper
Steps/Methods:
Add all ingredients in and mix well.
Let sit for 15-30 minutes before serving.
