These pickled onions go on anything and can be served alongside anything! Use them in fajitas, souvlaki, on the side of chicken dishes, steak… you can't go
wrong!
Ingredients
1 cup organic rice vinegar
2 tbsp of erythritol
1½ tbsp salt
1 tsp garlic powder
1 red onion, sliced then halved
¼ cup water

Directions
Place onions into a mason jar. Mix the other ingredients into a mixing bowl. Pour contents into the mason jar over the onions. Seal then refrigerate for at least 30 mins. Lasts one week in the fridge.
