Black Bean Salsa Bites Recipe

The two mini recipes needed for this dish are great on their own, but paired up they combine to create the ultimate topped cracker. Try serving up these tasty, hearty bites on Super Bowl Sunday or other game days, or just indulge in this tasty treat any day of the week!

Quick Black Bean Dip Ingredients:

2 cans or 4 cups cooke organic black beans

¼ cup chopped green pepper

½ cup chopped onion

1 small jalapeño without the seeds, finely diced

½ cup chopped cilantro

2 tbsp fresh lime juice

1 tbsp extra virgin olive oil

½ tsp chilli flakes

¼ tsp turmeric

¼ tsp cumin

¼ tsp of sea salt

Directions

Put the all the ingredients into blender or food processor. Blend until smooth.

Simple Salsa Ingredients:

2 cups diced tomatoes

1 cup diced cucumbers

½ cup diced red onion

1 tsp minced garlic

½ cup chopped cilantro

2 tbsp fresh lime juice

1 tbsp extra virgin olive oil

¼ tsp of sea salt

Directions

Put the all the ingredients into a mixing bowl and give it a few turns until mixed evenly.

Black Bean Salsa Bites Directions:

Break rice cakes into small pieces (they many no be even, that’s okay!), or use rice crackers or cucumber medallions. Add 1 tsp Quick Black Bean Dip and 1 tsp Simple Salsa. Serve and enjoy!
