Cilantro Garlic Lime Grilled Chicken Breast

Thanks to Artie in New Jersey for this yummy recipe! A snappy way to add flavor to lean chicken. Leftover chicken is great cold over a salad with diced mango and toasted pumpkin seeds.

Ingredients:

  • 4 large pieces of organic skinless boneless chicken breast
  • 1 cup of cilantro
  • 2 limes
  • 6 cloves of garlic
  • Salt to taste
  • Fresh cracked black pepper
  • 2 tablespoon organic extra virgin olive oil
  • 1 tablespoon of lime zest

Steps/Methods:

  1. Preheat your grill (for 10 minutes) combine garlic, cilantro and olive oil in the blender until the ingredients turn into a paste. Set aside.
  2. Wash and clean chicken and remove fat. Tenderize chicken with a meat tenderizer.
  3. Put the chicken in a large bowl, add salt, pepper, lime juice, lime zest and the cilantro garlic paste and rub until all of the chicken is evenly coated.
  4. Brush grill with olive oil and place chicken on grill for 10-15 minutes on each side. Once chicken is done garnish with lime wages and cilantro.
